Before you head off to go and practice your tabletops after our top tips from Joel Anderson, you need to fuel up with Mark Scott’s turbo pancakes, Scottish style.
Mark Scott is a former Team Wideopenmag rider, Enduro World Series podium pinner and finished 9th overall in the series. How did he do it? The secret is his turbo pancakes.
This is what Mark swears by when it comes to race day or big days in the saddle. While they certainly won’t win any presentation awards, they get the job done. What’s even better, is they’re super easy to make and have no milk, wheat or eggs, meaning you’ve got the intolerances covered.
Everything you need for this should be available in your local shop, so there really is no excuse to get these on the go at home, at the races or out on an adventure.
Recipe:
Ingredients:
Oats (half cup)
Banana (one, Fair Trade)
Honey (Organic)
Coconut oil
Tools:
Pan (frying)
Masher
Knife
Mixing bowl
Cooking appliance
Step 1 : Oats.
Likely the easiest step in the process. If you fail here, maybe go back to McMuffins…
Measure out your half cup of oats. Mark uses Scottish porridge oats but there’s nothing to stop you upgrading to the whole rolled oats. Oats are a super food, last forever and don’t cost the Earth. They release their energy slowly, are full of magnesium and stop your body producing fat.
Step 2 : Banana.
Slice your banana into pennies, making sure not to hack you hand or fingers to pieces as this ruins the recipe and the ride that should follow.
Bananas are yet another amazing, cheap, healthy super food that should go everywhere with you. They help you digest your food, won’t give you a mad insulin spike like sweets or chocolate and they are loaded with potassium.
Step 3 : HULK… MASH!
The therapeutic bit. Mash your oats and banana together while thinking of something that annoys you.
Top tip. Put a folded tablecloth underneath the bowl to stop it slipping on the work surface.

Step 4 : Add heat.
Bring whatever cooking appliance you have with you to a medium heat with the coconut oil added to the pan before heating.
Use a wooden spoon to whack your mixture into the frying pan, and start working it so the pancake isn’t too thick. As the mixture starts to warm it will do a better job of staying as a single pancake, but make sure they don’t stick to the pan.
Cook on either side until golden brown, anything darker and you will have started to burn the oats and banana, which means you’ll have to start over or wince through eating some sub-optimal pancakes.
The pancake should only need 5 minutes in the pan.
Step 5 : Mangez vous.
Now enjoy the fruits of your labour. Season with honey and tuck in. All washed down with your favourite breakfast-related hot beverage. Hop on the bike and feel the power.
Want to make your pancakes twin-turbo? Add a hint of brown sugar, a small amount of raisins and a pinch of salt to really supercharge your breakfast.
